What’s the one delicious ingredient that mac & cheese, burgers and poutine all have in common? Cheese, of course!

Our Executive Chef, François Côté-Lemieux, carefully selects the finest regional products for his menu—like Wagyu beef from Ferme Levaluc, fresh vegetables from Cultures du Moment, and seafood from Marché de Poisson Sherbrooke. And, as you might have guessed… plenty of locally crafted cheeses! Here’s a closer look at three incredible local cheesemakers whose creations we proudly feature in our dishes—without moderation!

From Tradition to Excellence: Fromagerie La Station

The story begins in 1928 when the family’s ancestor, Alfred Bolduc, settled at 440 Chemin Hatley to practice agriculture. It wasn’t until two generations later that Carole Routhier took over the family farm and introduced a fromagerie.

Driven by her passion for cheese, she developed a wide variety of raw milk and farmstead cheeses, all produced using organic farming methods. Among the most popular? Alfred le Fermier (now you know the origin of its name!), Chemin Hatley, Raclette de Compton, and Comtomme, to name just a few. Beneath the rinds of these award-winning cheeses, connoisseurs will recognize delicate aromas that reflect the rich local terroir—a true delight!

La Station’s boutique is open year-round, so don’t hesitate to stop by and bring home some of their exceptional cheeses.

Beyond Ice Cream: Laiterie de Coaticook

When you think of Laiterie de Coaticook, its famous ice cream probably comes to mind first. But… did you know they also make cheese there?

Founded in 1940 by three entrepreneurs, the dairy originally produced only milk, chocolate milk, and cream. Just two years later, ice cream was introduced, quickly becoming the company’s signature product. It wasn’t until the late 1970s that the Laiterie shifted away from milk and cream production to focus entirely on frozen desserts and cheddar. Since then, their cheese selection has continued to grow and improve. Today, you can notably enjoy their aged cheddar, mozzarella, and even goat cheese—a delicious expansion of their dairy expertise!

A Hidden Gem: Fromagerie Proulx

This is the kind of place only locals know about—but it’s always packed! Located in Saint-Georges-de-Windsor, this third-generation family-run fromagerie produces some of the best cheese curds in the region—if not the very best! Made fresh every day using traditional methods and high-quality Quebec milk, its cheese is a true local treasure.

A visit to its shop is a treat in itself. You can sample whey (the first stage of cheese-making), fresh cheese, cheese curds, and aged wheels. Even better, the production area is fully glassed-in, allowing you to watch milk transform into cheese before your eyes. Just be sure to arrive on time—cheese is made on a precise schedule, down to the minute!
