The Secrets Behind Omg’s Great Dessert Menu!

Do you like something sweet to round off your meal? At OMG Resto, we certainly do! We believe that if you’re going indulge yourself with a big dinner, you might as well go the whole hog and order every course—from a starter to a dessert. That’s why we’ve designed a deliciously decadent menu to end your meal on the sweetest of notes!

We asked the most popular questions about what goes into creating a dessert menu to Alexandre Grenier—sous-chef for Escapades Memphrémagog during the sailing season and cook at OMG (and our dessert “specialist”!) during the rest of the year. He gave us a rundown of the five things he takes into account when designing our menu of sweet delights.

How do you choose what to put on the dessert menu?

The desserts at OMG are really determined by what is most popular with our clients. Some of the desserts have been on the menu for a very long time, and if we tried to change them, we’d probably get flak from the diners!

They sometimes choose their dessert out of a sense of nostalgia. In other words, they like to always order the same one because it brings back pleasant memories. They go for their favourite, their classic choice. That’s why we’ve been revisiting the same desserts for over 10 years!

 

Are there any “must-haves”?

Oh yes! We wouldn’t dare not to include chocolate! So many people love it, and it goes well with a number of dishes on our main menu.

Crème brûlée is also a must. Because it’s quite difficult to make at home, people tend to choose it as a dessert when they eat out. Ours is incredible—rich, creamy, and not too sweet.

N.B. Right now we don’t offer it on the menu, but it’ll be back soon!

And the ubiquitous brownie (ours is gluten-free, by the way) has been around for years. There’s no way we could take that off the dessert menu! We’ve reworked it a couple of times, but we always come back to the classical version—i.e. served with the (heavenly!) vanilla ice cream from Laiterie Coaticook and a caramel sauce. It’s our best seller by far, year after year.

 

What about maple-flavoured desserts?

In my opinion, it’s not always a good idea to include a maple-flavoured dessert on the menu. Let me explain why…

First of all, you need so much maple syrup before the flavour comes through, and if you add too much, the dessert becomes sickly sweet.

When I do use maple syrup, I always incorporate the real thing, not just maple flavouring. After all, there’s no shortage of pure, 100% syrup in Quebec! Even so, I use it sparingly. For example, during the sugaring-off season, I’ll use it in maple pecan pies. They’re the perfect marriage between taste and texture.

And what about seasonal products?

We do use whatever local ingredients are in season at any given time. During the summer, for instance, I’ll add berries to some of the classic desserts, like making a strawberry coulis to go along with the brownie.

 

Why do you think eating a meal in a restaurant should always end with dessert?

Going out to a restaurant isn’t just to have something to eat, but also to experience the ambience and menu choices at a particular establishment. At OMG Resto, the emphasis is on indulging yourself with hearty portions of delicious, decadent foodand of course, dessert falls right into those categories! Order a dessert at the end of the meal and you’ll see what I mean!

Many people do just that, and some order the larger desserts so they can share it with their fellow diners. As if that weren’t enough, there are those who will order two or three different items, so they can sample several desserts at the same time!
